Meatless Mondays: Cauliflower Queso Fundido Tacos

#MeatlessMonday isn’t just a catchy hash tag! It’s an initiative with a mission to reduce the world’s meat consumption for the good of our own personal health and the health of the planet. The goal is to go meatless for at least one meal a week.  Not only is going meatless good for you, it’s also good for your pockets! Fresh vegetables, legumes, and grains all cost considerably less than lean meats and seafood.

For my Meatless Monday, I decided to make a Cauliflower Queso Fundido with black beans. The recipe was adapted from TheBrokeAssGourmet. Honestly, until this moment, I have never been much of a cauliflower fan – this recipe changed everything! I’ve been missing out. The tacos were so good that I didn’t even miss the meat. And did I mention, the recipe only takes 7 ingredients – totaling approx $7 for 5 servings.

Ingredients

  • 1 head of Fresh Cauliflower- Cored and cut into bite size pieces
  • 1 package of shredded cheese blend (Monterrey jack or cheddar)
  • 1 can of black beans
  • 1 can of Rotel (green chiles + diced tomatoes)
  • 1 avocado
  • 1 minced clove of garlic
  • 1 diced onion
  • 1 Package Corn Tortillas
  • handful of cilantro for garnish ***

Step 1

Toss cauliflower, onions and garlic in olive oil with salt and pepper to taste.

Step 2

Spread cauliflower and onion mixture on a parchment or foil lined baking sheet. Roast in oven for 15-20 minutes on 375 degrees. Cauliflower should be golden brown and tender. Take out of oven and let cool slightly.

Step 3

Layer roasted cauliflower mixture, rotel, and cheese in baking dish. I did three layers. End with cheese. Put back in oven and broil on low for 3 minutes to melt and brown the cheese.

Step 4

Brown tortillas in skillet with a little olive oil. About 1 minute on each side. *Tip – I used the yummy corn & flour mix tortillas I found at HEB. They are bomb! Especially when you can’t decide between corn or flour tortillas , just do both!

Step 5

Fill browned tortillas with finished queso fundido and add black beans. Optional – top with avocadoes and cilantro. ENJOY CHEESY DELICIOUSNESS !!!
