Creamy (but cream-less) Pasta Primavera

Pasta Primavera is one of my favorite dishes to make in the spring and summer. Loads of fresh veggies, tender noodles, and that creamy sauce make it a fan favorite in my house. My boyfriend and I have been phasing out more and more dairy as we transition to a more plant-based diet. I have been experimenting with different plant-based milk options to keep recipes like our favorite pasta primavera just as tasty. When I found Planet Oat® Extra Creamy Oatmilk, all my milk substitution nightmares were over.

Creamy (but cream-less) Pasta Primavera Recipe

Ingredients

  • 8 oz Rotini pasta (your preference)
  • Salt
  • 1 Tbsp Olive oil
  • 3 Cups chopped fresh veggies (peppers, carrots, zucchini, squash, green beans, peas, broccoli, etc.)
  • 1 small diced sweet onion
  • 2 minced cloves of garlic
  • 1 Tbsp dried Italian seasoning
  • 1 Tbsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp sea salt
  • 1/4 tsp red pepper
  • 1/2 cup Panko bread crumbs
  • 1/2 cup Planet Oat® Extra Creamy Oatmilk
  • 4 oz cherry tomatoes (cut into fourths)

Instructions

  1. Cook rotini al dente according to the instructions on the package
  2. While rotini is cooking, drizzle olive oil in pan over medium high heat and add garlic and onions – sauce until translucent
  3. Add veggies (EXCEPT for cherry tomatoes) and all seasoning, stir together and let mixture cook for 5 minutes over medium heat while stirring occasionally
  4. Add 1/4 cup of water to the pan and put the lid on, simmer until veggies are tender
  5. Mix drained rotini into the pan with the veggie mixture and simmer until any residual water is cooked off
  6. Add Panko bread crumbs and mix together well so it coats all noodles
  7. Add Planet Oat® Extra Creamy Oatmilk and mix together
  8. Simmer until sauce becomes slightly thicker
  9. Remove from heat and fold in cherry tomatoes
  10. Serve hot and enjoy
