Pork Banh Mi Bowl
Traditional Banh Mi sandwiches are one of my favorite take-out guilty pleasures, which is exactly why I created this Pork Banh Mi Bowl! I love the pickled veggies, sweet and spicy fish sauce, and of course, the delicious seasoned and tender pork. Sometimes I have a craving for the taste of the Banh Mi without all of the bread. That’s where my Pork Banh Mi Bowl comes in. It has all the flavor of the Banh Mi you love without all the guilt of the baguette and its made with Smithfield® Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin.
I picked up my Smithfield® Pork from my neighborhood Wal-mart. I can get all my grocery needs for the week and add a few cute outfits in too. The convenience and ease of their grocery pick-up service is second to none!

My Pork Banh Mi Bowl is an easy weeknight dish that can be made in less than an hour total! The first thing I do for this recipe is get my pork cooking, because that’s what takes the longest amount of time. The Smithfield® Pork tenderloins used in this recipe are best enjoyed when cooked to 145 degrees Fahrenheit with a 3 minute rest.
Once my Smithfield® Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin is in the oven. I go ahead and start my rice. I always use a rice cooker but you can cook it however you like. For this recipe, I used basmati white rice because I think it really lets the flavor of the pork and pickled veggies shine through but any grain will work.
After the rice is on, I chop up my radishes, cucumbers, red onions, and carrots for quick pickles! These need to be made right at the beginning of the cooking process so the veggies can get as much flavor infused into them as possible. The tangy and acidic taste of the pickled vegetables pairs so well with the richness of the pork.
The last step is to make a quick sweet and spicy fish sauce. After that’s done, all that left to do is cut up your pork and assemble you Pork Banh Mi Bowl. It’s that easy. Real Fresh, Real Flavor, Real Fast.

Pork Banh Mi Bowl Recipe
Ingredients
- Smithfield® Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin
- 2 cups Basmati White Rice
Quick Pickles
- 1 hothouse cucumber
- 4 medium radishes
- 2 medium carrots
- 1/2 cup red onion sliced
- 2 cups seasoned rice vinegar
- 1 cup water
- 4 Tbsp sugar
Sweet & Spicy Fish Sauce
- 1/3 cup sugar
- 1/3 cup water
- Juice of 1 lime
- 2 Tsp Soy Sauce
- 2 Tsp Vietnamese Fish Sauce
- 2 Tsp minced garlic
- 1/4 Tsp red peper flakes
Garnish
- 2 Jalepeno Sliced
- 1 cup chopped Cilantro
Instructions
- Line a baking sheet with parchment paper and cook Smithfield® Roasted Garlic & Cracked Black Pepper Fresh Pork Tenderloin for the amount of time listed on the package per pound.
- Start cooking basmati rice.
- While the pork and rice cook, slice cucumbers into small spears, radishes into slices, and carrots into sticks. (Reference picture above)
- In a large microwave safe bowl, mix together seasoned rice vinegar, water, and sugar. Place cut vegetables and red onion into vinegar mixture and heat in the microwave for 30 seconds. Let the “pickles sit out at room temperature until pork is done cooking.
- In small bowl, mix together sugar, water, lime juice, soy sauce, fish sauce, minced garlic, and red pepper.
- Once Smithfield Pork® is done cooking, let it rest for 3 minutes, then dice into cubes.
- Drain vinegar mixture off of vegetables.
- Assemble bowls with 4 oz of rice at the bottom, pickled veggies, and 4 oz of diced Smithfield Pork®. Top with cilantro, jalapeños, and sweet & spicy fish sauce.
