Apple Pie Oats
My Apple Pie Oats are a dream come true. I worked hard to create a recipe that is truly reminiscent of its name. It’s no secret that I’m a huge fan of oatmeal. And if you’re reading this, I hope you are too! Oatmeal is extremely versatile and it can take on whatever flavor profile you give it. So, I decided to combine two of my favorite things – Oatmeal and Pie! In this case, apple specifically because it’s so reminiscent of fall and who doesn’t love fried apples. I mean, Cracker Barrel – need I say more?
I found a way to give these Apple Pie Oats plenty of flavor without a ton of added sugar. Most of the flavor comes from the fact that the oats are cooked in apple cider. The other key player are the air fryer apples! I found this to be a great way to get all the flavors of southern fried apples without all the extra sugar and butter. When you take your fried apples out of the air fryer they are going to be “dry” which is why its imperative that you immediately add the butter and maple syrup then cover with foil. The trapped moisture transforms these 3 into tender soft apples in a luscious cinnamon butter sauce. It’s like magic!

Apple Pie Oats Recipe
Serves 2
Ingredients
1 C GF Old Fashioned Rolled Oats
2 C Trader Joe’s Spiced Apple Cider
1 Apple of your choice ( I used Honey Crisp)
1 Tbsp butter
1 Tbsp Maple Syrup
2 Handfuls of LoveCrunch Salted Caramel Granola
Dollop of Greek Yogurt (Optional )
Walnuts for Topping (Optional)
Instructions
1. Add Spiced Apple Cider and a dash of salt to small pot and bring to a boil
2. While you’re waiting for cider to boil, core, peel, and cut your apple into 1/4 inch thick slices
3. Once Apple cider is boiling, stir in oats, reduce heat to low and cook for 10-12 mins (stir when needed)
4. While oatmeal is cooking, sprinkle cinnamon on apples and toss in a bowl to coat
5. Air fry for 12-14 mins at 400 degrees . Make sure to shake half way through
6. Once apples are done, place in a bowl, add maple syrup and butter then cover with foil for 2 mins. *this part is extremely important for apples to become soft and syrupy*
7. Pour oatmeal into two bowls, top with apples, granola, yogurt, and any of your other favorite toppings. Enjoy!
