Mixed Berry Jam
What do you do with your old berries? You know those ones that are on the verge of getting moldy and you might throw out but could maybe still salvage. The answer to what you should make is mixed berry jam!
This recipe is quick, easy, and delicious plus it uses every day kitchen items and does not include pectin. My mixed berry jam is sweet but still lets the true flavors of the berries shine through with a bit of tartness.
Strawberries, raspberries, and blueberries were used in this mixed berry jam but you can use any combination of berries you would like or just one type if that’s all you have on hand.
Use mixed berry jam as a topping for your ice cream, oatmeal, or fruit parfait. You an also use it in a smoothie to add a little sweetness or eat it with a biscuit, toast, or croissant. Whatever you put it on, you’ll be sure to enjoy how simple it is to make and how delicious it is to eat.
Mixed Berry Jam Recipe
Ingredients:
- 2 cups fresh berries
- 1/2 lemon (seeds removed)
- 1/2 cup sugar
- 1 tbsp corn starch
- 1 tbsp warm water
- 1 scoop Vital Proteins Original Collagen Peptides(optional)
Directions:
- Rinse all berries and add them to a heavy bottom sauce pan
- Squeeze juice of half a lemon over the berries and add sugar then mix
- Bring to a boil and cook over medium heat for about 10 minute while stirring frequently with a wooden spoon. Use a masher or a fork to macerate any berries that have not popped yet. Remove from heat
- In a small bowl, mix corn starch and warm water together until dissolved
- Add corn starch mixture and Vital Proteins (if using) to the berry mixture
- Place the mixture back over medium heat and let it come to a boil for about 10 minutes while stirring frequently with a wooden spoon
- Cool then refrigerate in a sealed container, can/jar according to these instructions, or enjoy hot!
