Chocolate Covered Strawberry Oatmeal

My chocolate covered strawberry oatmeal is perfect for a romantic breakfast. Valentine’s Day is right around the corner so I decided to do a fun twist on one of the most popular Valentine’s desserts, chocolate covered strawberries! This recipe combines creamy vegan hazelnut milk, rolled oats, natural sweetness, fruit and fun toppings to create a decadent but healthy breakfast. Perfect as an alternative option to more calorie dense breakfast favorites like pancakes or french toast. This recipe can be enjoyed hot or cold depending on what mood you’re in,

Chocolate Covered Strawberry Oatmeal Recipe
Ingredients (1 bowl)
- 1/3 C Bob’s Redmill Gluten Free Organic Old Fashioned Rolled Oats
- 1/2 Cup Hazlenut Milk
- 1/4 Cup water
- 1 Tbsp raw agave nectar or honey (more if you like it sweet)
- 1 Tbsp Cocoa Powder
- 1/2 Teaspoon Vanilla Extract
Toppings
- Sliced strawberries
- Nutella
- Mini semi-sweet chocolate chips
Instructions
- Add oats, hazelnut milk, water, agave, and cocoa powder to a small sauce pan and mix well.
- Over medium-high heat bring to a boil *watch carefully* then reduce heat and simmer for 5 minutes
- Remove from heat, add vanilla extract
- Pour into a bowl
- Add toppings and enjoy
For Overnight – Oats: Mix all ingredients together except for toppings in a Tupperware container and refrigerate over night. Add toppings right before serving!
