Guilt-Free Piña Coladas

I love piña coladas and I’m not talking about the pre- mixed stuff you find in a bottle at the store. I’m talking about real deal freshly made – “I’m sitting on the beach of a tropical island ” Piña Coladas.

As much as i love them, I’ve never been crazy about all the cals they contain and how guilty I feel about drinking just one! Not to mention, coconut cream (like Coco Lopez) is loaded with all type of preservatives, fat, and lots of extra sugar. That’s why I’m so excited about this recipe I came up with! It’s only 3 ingredients and the game changer is Vita CoCo Pressed Coconut water. It’s an easy, refreshing, guilt – free summer treat for hanging by the pool, bbq, summer cool outs, etc.

Guilt-Free Pina Colada

Yields 2 –  10 oz Servings \ 5 minutes 

Ingredients 

  • 1 1/2 cup diced frozen pineapple
  • 3/4 cup Vita Coco Coconut Water with Pressed Coconut
  • 2.5 oz Bayou Satsuma Rum
  • Pineapple Slice (For Garnish)

Directions

Put the frozen pineapple, coconut water, and the  rum into a Vitamix or blender on highest setting. Blend until smooth and frosty. Pour the drink into 2 glasses and garnish the rim with pineapple slices. Enjoy!

Tips: The Vita Coco Coconut Water with Pressed Coconut is a new item and is not available at every store. I’ve been able to find it at Randall’s and CVS. I checked my local H-E-B but was not able to find it there. If unavailable, sub Thirsty Buddha with pulp.

I really enjoy the Bayou Satsuma Rum, it has a slight orange flavor but is not over powering and adds to that tropical taste. You can substitute whatever rum you have on hand. To keep it low cal , i suggest using a white rum like Bacardi.
